Artichoke and Brie Dip

Ingredients:

• 12 oz artichokes, drained and chopped
• 1 cup Brie cheese
• 1 cup Parmesan cheese
• 1 cup shredded Mozzarella cheese
• 1 cup mayonnaise
• 1/2 cup sour cream
• 1 teaspoon Worcestershire sauce
• 1 tablespoon mustard
• 1/2 teaspoon salt
• 1/2 teaspoon pepper Method:
• Combine artichokes, mayonnaise, sour cream, mustard and Worcester sauce together until well blended.
• Add Mozzarella and Parmesan cheese and blend.
• Add Brie and mix well.
• Add salt and pepper.
• Sprinkle top with mozz cheese
• Put in baking dish and bake at 450 degrees for 15-20 minutes.
• Serve warm with toasted rustic garlic bread.

Coconut shrimp served with an orange marmalade and passion fruit dipping sauce

Entrees: Filet mignon in a Port wine reduction topped with crumbled Bleu cheese, served with mashed potatoes and mixed vegetable

1/2 Herb roasted chicken served with mashed potatoes, mixed vegetables and brown gravy

Blackened Mahi-Mahi with black bean salsa served with saffron rice and sauteed spinach
